Nested Sensorium: Sushi Laboratory + Seasonal Garden Memories

Blossom, wind and rain,
I seal them with care,
and a slight pride of skill.

Come, come and see,
One step away from shoji.

You and I, Strangers you may presume.

But you should know me,
I’ve already talked to you,
with my sushi.

Nested Sensorium offers the anonymous release of seasonal sushi. Sushi masters convey the seasonality and craftsmanship to the public by creating unique sensory memories and restoring dining rituals.

The architecture is conceived as an interlocking form of open garden as season indicator and food laboratory as sushi-publisher. The ascending platforms and increasing openings around the nested volume provide shortcuts of sushi making processes and rituals to the guests before they enter the tasting room. The lift-table in the performing room enables the sushi masters to connect with the guests by sushi without exposing their identity.
